For most of my adult life, my apartment location priority has been anywhere within three blocks of the best coffee I could find in the city: Vivace Espresso. Their stand and shops have been my morning ritual, sometimes office, and hangout spot since 2002. I start almost every day with a cappuccino from my favorite baristas. This ice cream is a tribute to Don and Lisa, the best team at Vivace. It is the dessert version of the perfect cappuccino--8 ounces, double, sugar the shot, please! Thoroughly combine all the ingredients in an airtight container with a lid. Cover and refrigerate at least 12 hours or overnight. Strain the mixture through a fine mesh sieve, pressing to extract as much liquid as possible. Discard the sieve contents. Pour the strained mixture into an ice cream maker and process according to the manufacturer’s instructions. Using a rubber spatula, transfer the ice cream to a glass or plastic freezer container. Cover tightly and freeze until the ice cream is firm, at least 4 hours. I like to make mine with espresso. This dessert is for coffee lovers like myself. It definitely packs a punch. I prefer mine less sweet so I use only 1/3 cup sugar for 4 cups of coffee. If you prefer your espresso sweeter, feel free to add more sugar. I recently bought a box of demerara sugar, a natural, unrefined sugar common in Britain. It has a slight molasses flavor, which works well in this dish. If you don’t have it, you can substitute turbinado sugar or any sugar that you have. Because I like a slight mocha flavor with my espresso, I stir in a little unsweetened cocoa powder. Not only does it taste good, but it’s good for you too. Cocoa powder, which is made from the cocoa bean, is filled with a type of plant nutrient called flavonoids. The flavonoids found in chocolate (called flavanols) have antioxidant properties that help the body resist damage from normal bodily processes and environmental contaminants. They also have beneficial effects on cardiovascular health such as lowering blood pressure and improving blood flow to the brain and heart. To complement the espresso and cocoa, I also add a secret ingredient: a bit of cinnamon. INGREDIENTS 4 cup brewed espresso or strong coffee ⅓ cup natural demerara sugar (can substitute turbinado sugar) 2 Tbsp unsweetened cocoa powder ¾ tsp cinnamon fat-free whipped topping or freshly whipped cream, optional dark chocolate shaving, optional DIRECTIONS Stir the espresso, sugar, cocoa powder and cinnamon together in a large bowl until the sugar is dissolved. Pour the mixture into a 13- x 9-inch glass baking dish. Taste and adjust the level of sweetness as desired. Place the dish in the freezer. Remove the dish after thirty minutes and using a fork, scrape the mixture, breaking up any icy clumps. Return the dish to the freezer. Repeat the process every thirty minutes or so, scraping the mixture with a fork to break up the ice crystals and create a light and fluffy texture. It should take about 2-2 ½ hours total. Scoop the granita into dessert bowls. Serve plain or garnish with whipped topping, chocolate shavings and a sprinkling of cinnamon if desired. Serve immediately. Refrigerate for 1 hour. Strain the milk through a fine sieve into a measuring cup and add as much fresh milk as needed to make 1 1/2 cups. Discard the coffee grounds. In the bowl of a standing electric mixer fitted with the dough hook, combine 1/4 cup of the coffee milk with the yeast and granulated sugar; let stand until foamy, 5 minutes. Add the remaining coffee milk, the 4 1/2 cups of bread flour and the butter and salt. Mix at low speed until the dough just comes together, 2 minutes. Increase the speed to medium and mix until the dough is smooth, 5 minutes. Transfer to a greased bowl, cover and let stand in a warm place until slightly risen, 2 hours. Divide the dough into 4 pieces. On a floured work surface, roll out one piece of dough a scant 1/3 inch thick. Cut into 2-inch squares, then cut each square into two triangles. Transfer to a floured baking sheet. Repeat with the remaining dough. Let stand for 20 minutes. In a saucepan, heat 2 inches of oil to 360°. Working in batches, fry 10 or 12 beignets at a time until browned and cooked through, 5 minutes. Drain on paper towels and transfer to a bowl. Dust generously with confectioners’ sugar and serve immediately with vanilla ice cream and espresso. NOTES This blend combines coffee with chicory, a root that is roasted and ground. SERVING SIZE 9 PREP TIME TOTAL TIME 2 HR ADD TO MY RECIPE BOX ADD TO MY GROCERY LIST PRINT THIS RECIPE EMAIL THIS RECIPE ADD NOTES TO RECIPE INGREDIENTS CAKE 8 Tbsp unsalted butter, chilled and diced, plus more for the pan 2 cup all-purpose flour 2 cup light brown sugar 1 tsp cinnamon ¾ cup pecans, toasted and coarsely chopped 1 ½ tsp baking powder ¾ tsp baking soda ½ tsp salt 1 cup buttermilk 1 egg, at room temperature 1 Tbsp instant espresso dissolved in 1 tablespoon hot water 1 tsp vanilla extract confectioners' sugar DIRECTIONS Equipment needed: A 9-inch spring form pan and a small ramekin 3 inch in diameter and about 1 3/4 inch tall (see cooking tip). Arrange a rack at center position and preheat the oven to 350 degrees F/180 degrees C/gas 4. Butter the bottom and sides of the spring form pan and then cut a sheet of parchment paper to fit the bottom of the pan. Place the paper in the pan and then butter the paper. Butter the sides and bottom of the ramekin and place it, right-side up, in the center of the pan. In a large bowl, stir together the flour, brown sugar, and cinnamon. Add the diced butter and rub the mixture between your fingers until it resembles coarse crumbs. Remove 3/4 cup/115 g to a small bowl and add the chopped pecans; set aside. Add the baking powder, baking soda, and salt to the large bowl with the flour mixture and stir to combine. In a medium bowl, whisk together the buttermilk, egg, dissolved espresso, and vanilla and then stir them into the dry ingredients just until well blended. The batter should be quite thick. Ladle half of the batter into the prepared pan and spread evenly with a spatula. Sprinkle half of the nut mixture over the batter. Repeat with the remaining batter and nut mixture. Place the pan on a rimmed baking sheet and bake until a tester inserted into the area around the ramekin comes out clean, 40 to 45 minutes. Cool the cake to room temperature, about 45 minutes. Then run a sharp knife around the inside edge of the pan to loosen the cake. Run the knife around the outside of the ramekin to loosen it from the cake. Gently remove the ramekin and the sides of the pan. Dust the cake with confectioners’ sugar, drizzle the glaze over the top, and serve. INGREDIENTS CREAMY ESPRESSO GLAZE 3 Tbsp milk, plus more if needed 1 ½ tsp instant espresso 3 oz cream cheese at room temperature, broken into small pieces ⅓ cup confectioners' sugar DIRECTIONS Creamy Espresso Glaze: In a medium bowl, whisk together the milk and espresso powder until the espresso has dissolved. Add the cream cheese. With an electric mixer on medium speed, beat the mixture until blended, and then gradually beat in the confectioners' sugar. The glaze should be smooth and thin enough to drizzle over the coffee cake. If too thick, thin with 1 teaspoon or more of extra milk. Cooking tip: A 3-inch ramekin works best in this recipe. If you use one wider in diameter the space for the batter will be smaller and as the cake cooks some of it is likely to fall into the ramekin. If you have an angel food pan with a removable bottom or a flat-bottomed tube insert for a 9-in/ 23-cm spring form pan, you can use either of those instead. A squeeze bottle with a small opening makes drizzling the glaze over the coffee cake very easy. In a small saucepan, combine 1 cup of the sugar with the water and bring to a boil. Cook over moderately high heat, undisturbed, until an amber caramel forms, about 12 minutes. Remove the saucepan from the heat and stir in the roasted peanuts, cinnamon and salt until the peanuts are evenly coated. Scrape the caramel mixture onto the prepared baking sheet and spread in an even layer. Let stand until the brittle is hardened, about 20 minutes. Break off 4 medium-size pieces of peanut brittle. Place the remaining brittle in a resealable plastic bag and roll with a rolling pin to crush the brittle into small pieces. In a medium bowl, whisk the sweetened condensed milk with the dissolved instant coffee. In another medium bowl, using an electric mixer, beat the heavy cream with the remaining 1 tablespoon of sugar at high speed until softly whipped. Scoop the ice cream into 4 bowls and drizzle with the milky coffee. Sprinkle with the crushed peanut brittle and top with a generous dollop of whipped cream. Preheat the oven to 350°. Spread the almonds on a rimmed baking sheet and toast for about 8 minutes, until golden and fragrant. Let cool. 2. Meanwhile, in a large heatproof bowl set over a saucepan of simmering water, melt the chocolate, stirring frequently, until smooth, about 5 minutes. Remove from the heat and keep warm. 3. In a small bowl, mix the espresso with the sugar until dissolved. Whisk in the rum and stir in the bread cubes; let stand for 5 minutes. 4. Meanwhile, in a large bowl, using a handheld electric mixer, whip the cream until soft peaks form. 5. Spoon half of the soaked bread cubes and any excess chocolate into 6 parfait glasses. Top with half of the whipped cream and half of the almonds. Repeat with the remaining bread and chocolate, whipped cream and almonds. Serve at once. Coffee and banana bread. One just makes the other that little bit nicer. It’s about having something warm in both hands. Both are friendlier after a slug of milk in the coffee and a smear of butter on the banana bread. It’s exactly what you need at about 10 am on a grim morning. I’ve long maintained that multitasking can make the world better. The Hungry One, disagrees in a sturdy, masculine kind of way. He thinks that’s how mistakes get made. Yet I only make to the other side of doing the monthly finances by putting special hand cream on my feet and wearing thick socks while I plod away, entering expenses. That way, something painful still feels indulgent. A trip to the gym is made possible only by listening to carefully curated playlists (and yes, the sound of Florence and the Machine singing ‘run faster for your…’ does actually make me run faster. I know I have to work for my cake). When it comes to a shot of coffee in your banana bread- this is one of those incidents of multitasking that makes a good thing, even better. The coffee tempers the sweetness but adds a note of caramel. The milk helps keep the bread moist and cake-like (because really, let’s not kid ourselves, this is cake, even if we eat it in the morning). And, that extra dash of caffeine just might add a little bit of extra spring in your step. I now present to you the multitasking coffee-banana bread combination; making your cake work harder for you. INGREDIENTS 2 ⅓ cup plain flour 1 tsp bicarbonate of soda 1 tsp salt 8 Tbsp butter, with extra for greasing 1 cup caster sugar 2 free-range eggs 4 banana, mashed ⅓ cup espresso topped with milk DIRECTIONS Preheat the oven to 180C/350F/Gas 4. Sift the flour, bicarbonate of soda and salt into a large mixing bowl. In a separate bowl use a hand mixer to combine the butter and sugar together until light and fluffy and duckling yellow. Add the eggs, mashed bananas and coffee and to the butter and sugar mixture and stir well. Fold in the flour mixture. Do this gently- you don’t want to overwork the flour and have it turn out tough. Grease a 20cm x 12.5cm/8in x 5in loaf tin and pour the cake mixture into the tin. Transfer to the oven and bake for about an hour, or until well-risen and golden-brown. Remove from the oven and cool in the tin for a few minutes, then turn out onto a wire rack to cool completely before serving. Serve with a coffee on the side. SERVING SIZE 12 ADD TO MY RECIPE BOX ADD TO MY GROCERY LIST PRINT THIS RECIPE EMAIL THIS RECIPE ADD NOTES TO RECIPE Made with whole wheat flour (I used a half all purpose, half whole wheat combo this time, but you can make them all whole wheat if you're trying to be good) and no butter, and boasting a healthy dose of dark chocolate flavor, a whole cup of coffee, and semi sweet chocolate chips (Flavanols! Antioxidants!), I think I might just be awake enough for breakfast when these are around. *Note: Even though these contain coffee, they don't really taste like it. For a more prominent coffee flavor, try adding a tablespoon or so of instant coffee granules. INGREDIENTS 1 cup whole-wheat pastry flour 1 cup all-purpose flour ½ cup brown sugar ⅓ cup cocoa powder (I used Dark Chocolate cocoa powder) 1 tsp baking powder ½ tsp baking soda ¼ tsp salt 1 egg ½ cup canola oil 1 cup strongly brewed coffee, cooled to room temperature ½ tsp vanilla extract ½ cup semi-sweet chocolate chip DIRECTIONS Preheat oven to 350°F. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda and salt. Stir in chocolate chips.{I like stirring add-ins to dry ingredients to help prevent sinkage to the bottom.} In a separate bowl, lightly beat egg. Mix in oil, coffee and vanilla. Pour wet ingredients over dry ingredients and mix just until flour is no longer dry. Divide batter among 12 greased or paper lined muffin cups and bake for 20-22 minutes, or until a tester comes out clean. Let cool for a few minutes before unmolding. COFFEE-CARDAMOM ICE CREAM WITH FIGS Spicy-sweet cardamom is a perfect complement to bitter coffee, and baked phyllo pieces add carby crunch without an overload of calories. INGREDIENTS ¾ cup heavy cream 4 tsp instant espresso powder 1 cup non-fat sweetened condensed milk ¾ cup low-fat plain yogurt ½ tsp ground cardamom vegetable cooking spray 1 sheet (9" x 14") phyllo dough 6 fresh or dried figs, sliced DIRECTIONS In a bowl, beat cream until doubled in size; set aside. In another bowl, dissolve espresso powder in 1 tsp warm water. Gently fold together whipped cream, dissolved espresso, condensed milk, yogurt and cardamom until incorporated. Cover with plastic wrap and freeze until solid, 6 hours. Heat oven to 350°. Coat a baking sheet with cooking spray. Place phyllo on baking sheet and coat with cooking spray; fold in half and coat with cooking spray again. Bake until brown and crisp, 7 to 8 minutes. Let cool; shatter phyllo with your hands into small shards. Divide ice cream, phyllo pieces and figs among 6 bowls. During their basic training, Suarez and Haft recall requiring black coffee to stay awake for their classes. They explain that "nobody talked about recipes or ratios -- on breaks, you threw a dollar into the metal tin, you filled up a plastic foam cup and you got back in the classroom. All you cared about was the caffeine keeping you stimulated for the next hour." They would then share a pot of coffee with their comrades to study in the evening. When the in the field soldiers receive an "Each Meal Ready to Eat" pack, which according to Suarez and Haft contains an entree, a snack, a dessert and small items to add variety to the meal. Packets of hot chocolate, coffee, apple cider or even tea were also included. Suarez and Haft claimed that a barter for the coffee-like items would ensue. After their deployment, Suarez and Haft recalled drinking coffee in a desert outpost. They described the beverage as a "syrupy, iced coffee creation," but it tasted better than anything they had had in a long time. When they returned home the obsession with coffee remained. They believe the process of drinking coffee at home and conversing with friends helped them to re-adjust to civilian life, which inspired them to write a book. Coffee has been around since the 14th century. Even though the ancient beverage had been around for centuries coffee became popular amongst soldiers during the Industrial Revolution. It became a household staple due to the rise in advertising and the exposure to different cultures after World War I. It continued to play a role in the military through wars and training.
After World War I, soldiers began to drink coffee even more. In The Tea and Coffee Trade Journal, William Ukers wrote that “the 2,000,000 soldiers who went overseas and there had their coffee three times a day…since returning to civilian life are using it more than ever before.”

Since the Civil War, coffee has played a part in the life of the soldier. Civil War Captain Robert K. Beecham wrote in his book Gettysburg: The Pivotal Battle of the Civil War, that “The power of the soldiers to endure the fatigue of the march and keep their places in the ranks was greatly enhanced by an opportunity to brew a cup of coffee by the wayside.” This tradition of coffee and the military particularly fascinated marines Michael Haft and Harrison Suarez. When Haft and Suarez joined the Marines they expected a tough journey, but they didn't anticipate an obsession with coffee. As their enthusiasm with the beverage grew, they began to realize that they had joined the ranks of many soldiers before them who relied on the drink as a way of life. In The New York Times Haft and Suarez wrote of the importance of the ritual that drinking coffee provided. "We would often share with our platoon sergeants and squad leaders while we gathered around a map and discussed our plans for the day. Whether in the forests of North Carolina, the mountains of California, or the deserts of Afghanistan, the ritual provided a sense of continuity."
